fix(deps): zip 9.0.4 — la linea 8.x è ritirata da crates.io (#697) - #700

Tutte le release 8.x (8.0.0–8.6.0) e 9.0.0–9.0.2 sono yanked: le build con --locked passano ancora, ma ogni `cargo update` fallisce (dep-canary rosso). Unico cambio di API che ci tocca: `ZipFile::name()` ora ritorna `Result<Cow<str>>`, usato solo in un helper di test. Aggiunti due test di roundtrip per `estrai_da_zip`, che in produzione gira solo su Windows e altrimenti la CI Linux non coprirebbe. Dipende da tauri-apps/plugins-workspace#3698 (Renovate, zip v9, aperta). La build con--lockednon è toccata.
