ELK output formats: PS/EPS/EMF via vectory - #55

Formatter::Elk accepts svg (default), ps, eps and emf. The SVG is laid out in-process as before; vector conversion runs through vectory's pure-Ruby postsvg/emfsvg pipelines, so `lutaml generate --layout elk` now covers Office (EMF) and print (PS/EPS) targets with no external tools. vectory is a soft dependency like elkrb: without it, PS/EPS/EMF requests raise with installation guidance.

Closes #53 (the vectory half).
Formatter::Elknow acceptssvg(default),ps,eps, emf. Conversion runs through vectory's pure-Ruby pipelines (postsvg for PS/EPS, emfsvg for EMF) — verified against marker/polyline-bearing ELK output. vectory is a soft dependency with install guidance on LoadError.Remaining from #53: direct PDF via pdfrb's Canvas needs a font-resource design (text emission requires embedded fonts) — deliberately not rushed; the issue stays the tracking point for it.
