Document how iOS moves the caret during a touch - #6023

docs/cursor-and-caret.md, covering iOS Safari behavior observed with the debug log while working on #5983 and #6002:getCaretOffsetcan choose different edges.mousedowniOS sends about 625ms into a held press.TOUCH_SLOP, moves one character at a time, and jumps to the start of the thought if the finger leaves it.docs/testing.mdgains a note on the limits of synthesized touches on BrowserStack: they never start a caret drag, and two taps cannot be sent 50–500ms apart.
