feat: add dated batch wrap ratios

Motivation

RWA.xyz currently has to request wrap-ratio history one asset at a time. It needs one query that returns the historical multiplier for every configured ST0x asset on a given UTC date.

Solution

• add an optional date=YYYY-MM-DD query parameter to the batch wrap-ratio endpoint
• interpret the date as 23:59:59 UTC and return the latest stored snapshot at or before that cutoff for each selected token
• preserve the existing live on-chain behavior when date is omitted
• preserve the existing chainId filtering and V1/V2 compatibility behavior
• return missing or invalid historical rows as per-token errors instead of failing the full batch
• add an index for chain/token/timestamp lookup and document that dated responses use observed snapshots rather than historical RPC reads
