This PR prepares the v0.3.1 release. It moves event-sorcery (through the workspace version) and sqlite-es from 0.3.0 to 0.3.1 and updates the workspace lockfile and both example lockfiles to match. No code or dependency changes.
The bump is consistent. No other file holds a version string: README, docs, flake.nix and CI have none, and there is no changelog. Internal dependencies are path-only. The lockfile diff has no hashlink change, as the description says. A patch bump fits: since v0.3.0 the crates gained only the additive snapshot rebuild from #61 plus doc-link fixes. No public items were removed or renamed, no signatures changed, no required trait items were added, and there are no new migrations, so consumers on ^0.3.0 can take it as is.
