Use text-builder-linear for unicode-data-names

We should use [`text-builder-linear`](https://hackage.haskell.org/package/text-builder-linear) for `Text` and `ByteString`. I am going to leave this at the moment, because this repo really needs some love. Will open an issue to not forget about it.
