AppVeyor: Refine build process and GitVersion handling

- Added cleanup step to reset assemblyinfo modifications.
- Updated GitVersion command to prevent unintended increments.
- Introduced parameters to stay on the current commit.
- Added a note to address tag handling in GitVersion.
- Removed the `after_build` section as it is no longer needed.
